Best Grilled Shrimp Tacos

 INGREDIENTS

AVOCADO SALSA:

  1. 2 ripe avocados, diced
  2. 1/4 cup finely diced red onion
  3. ½ jalapeno, seeded and diced finely
  4. 3 Tablespoons finely chopped cilantro
  5. 2 Tablespoons lime juice
  6. 1 Tablespoon olive oil
  7. 1 clove garlic, minced (about 1/2 teaspoon)
  8. Salt and pepper to taste
  9. 24 medium shrimp, (about 1/2 lb), raw, peeled and deveined
  10. Wooden skewers

SHRIMP MARINADE:

  1. 1 Tablespoons olive oil
  2. 1/2 teaspoon chili powder
  3. 1/4 teaspoon ground cumin
  4. 1/4 teaspoon salt
  5. 1 clove garlic, minced (about 1/2 teaspoon)
  6. 1 teaspoon lime juice
  7. 8 (6-inch) Old El Paso flour tortillas
  8. Toppings: chopped red cabbage, crumbled Cojita or feta cheese


INSTRUCTIONS:

01. Combine all the avocado salsa ingredients in a medium-sized bowl and season with salt and pepper. 
Store refrigerated until you're ready to serve.
02. Grill at a medium-high temperature.
03.Mix the ingredients for the shrimp marinade in a big bowl. Mix in the shrimp by tossing them in. As the grill heats up, let the shrimp marinade. If you leave it too long, the shrimp will begin to fry from the lime juice.
04.The shrimp are skewered onto wooden skewers. Grill for two to three minutes on each side, or until the shrimp are opaque. If you do not have a grill, you may cook these in a skillet on the stove.

05.Warm tortillas in the microwave or on the grill.

06.Tacos should be assembled by stuffing each one with three heated shrimp, some chopped cabbage, and avocado salsa. Add feta cheese or cojita on top. Accompany with wedges of lime.
 

NOTES:

 To avoid scorching, soak the wooden skewers in water beforehand.
You may also use corn tortillas here, if that's more your style.
Add extra red pepper flakes for even more spiciness!
