Best Fajita Parchment Baked Chicken

 This Baked Chicken with Fajita Parchment is the ideal way to liven up your weeknight meals. Your taste senses will be extremely pleased with the symphony of flavors that the peppers, onions, and chicken create!


Ingredients:

for 1 serving


  1. parchment paper, or aluminium foil, 12x18 inches (30.5 x 46 cm)
  2. 1 chicken breast
  3. ½ red pepper, sliced
  4. ½ yellow pepper
  5. ¼ red onion, sliced
  6. 3 tablespoons salsa
  7. 1 teaspoon taco seasoning
  8. 1 tablespoon mexican cheese blend
  9. 1 tablespoon olive oil
  10. salt, to taste
  11. pepper, to taste


Preparation:

1. Turn the oven on to 400°F, or 200°C.
2. Once the parchment paper is folded in half, unfold it.
3. Slice the onion and peppers thinly, then arrange them on half of the parchment paper.

4. Add a drizzle of oil and season with salt and pepper.
5. Position the chicken over the peppers. Add salt, pepper, and taco seasoning to taste, then top with salsa. Add cheese on top.
6. The parchment paper should be folded over the chicken and then folded over the edges to seal it together.
7. Bake the chicken for 25–30 minutes, or until it reaches an internal temperature of 165˚F (75˚C).
