Rice with Black Beans

A satisfying, tasty, and affordable 30-minute vegetarian dinner is made with black beans and rice! Excellent as a side dish or combined with a burrito bowl.


 Ingredients:

  1. 1 teaspoon olive oil
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. ¾ cup uncooked white rice
  5. 1 ½ cups low sodium, low fat vegetable broth
  6. 3 ½ cups canned black beans, drained
  7. 1 teaspoon ground cumin
  8. ¼ teaspoon cayenne pepper


Directions:

Step No.1


In a saucepan, heat the oil over medium-high heat. Add the onion and garlic, and simmer and stir for about 4 minutes, or until the onion has softened. Add rice to coat; heat and stir for an additional two minutes.

Step No.2

 

Once added, bring the vegetable broth to a boil. After cooking for about 20 minutes or until the liquid is absorbed, cover and lower the heat to a simmer.

Step No.3

 

Add the beans, cumin, and cayenne and stir. Cook until the beans are well heated.
