A quick and cheesy dinner consisting of basic items such as chicken, rice, and broccoli is the One-Pan Cheesy Chicken, Broccoli, and Rice. It takes less than 30 minutes to prepare this one-pan dinner!
INGREDIENTS
- 3 tablespoons extra virgin olive oil
- 1/2 medium yellow onion, diced finely
- 1 pound boneless skinless chicken breasts, , cut into bite sized pieces
- 2 cloves of garlic, minced
- 1 teaspoon of kosher salt and freshly ground pepper to taste
- 1 cup uncooked extra long grain white rice
- 2 1/2 cups of low-sodium chicken broth, (I like to use Better than Buillion Chicken base)
- 2 1/2 cups broccoli florets, cut into bite sized pieces
- 2 cups shredded extra sharp cheddar cheese
Directions:
01. Over medium heat, sauté onions in two tablespoons of olive oil in a large skillet or pan. Use salt and pepper to season the chicken.
02. Turn the heat up to medium-high and add the chicken to the pan once the onions start to soften.
03. Add the garlic once the chicken pieces have browned. Cook for an additional minute or so.
04. Transfer the chicken to one side of the pan and brush the other side with an extra tablespoon of olive oil.
05. For a few minutes, add the raw rice to the olive oil and sauté it.
06. When the mixture reaches a boil, add the chicken broth and stir. Put a lid on the pan and reduce the heat to a simmer.
07. Cover and cook the chicken and rice combination for approximately 12 minutes.
08. After equally scattering the broccoli on top of the chicken and rice mixture, toss everything together.
09. Cook the rice and broccoli together for a further 8 minutes on low, covered.
10. Take off the heat and mix in ½ cup of cheese.
11. Once the cheese has melted, sprinkle the remaining cheese on top, cover, and let sit for one to two minutes.
