Herb-Lemon Rice Pilaf

This recipe for rice pilaf has enough elements to stand alone as the main course, but it can also serve as a backdrop for roasted fish and meats. The secret to adding complexity to this dish is textures: The ideal bite combines a sharp, briny punch from the feta, a crunch from the almonds, and a freshness from the herbs and lemon.

 If you're not a fan of dill, mint would make a great substitute. Intolerance for almonds? Replace them with pine nuts or pistachios. Feel free to experiment with different taste combinations as rice is an ideal food to work with.


 Ingredients:

  1. 2 c. basmati rice 
  2. 2 cloves garlic, finely grated
  3. Juice and zest of 1 (or more) lemon 
  4. 5 Tbsp. extra-virgin olive oil, divided
  5. Kosher salt 
  6. Freshly ground black pepper 
  7. 1 medium yellow onion, chopped 
  8. 1/2 c. orzo
  9. 3 c. low-sodium chicken broth
  10. 2 bay leaves
  11. 1 bunch fresh dill, finely chopped 
  12. 1 bunch fresh parsley, leaves and tender stems finely chopped
  13. 1/3 c. crumbled feta (about 2 oz.) 
  14. 1/4 c. toasted slivered almonds 


Directions:

Step 01: 

Rinse rice in a fine-mesh sieve with cold water until the water flows clear. Make sure to drain well. Combine the garlic, lemon juice, and two tablespoons of oil in a small bowl and season with salt and pepper.

Step 02: 


Heat 1 tablespoon of oil in a big pot over medium heat. Saute onion for 3 minutes or until transparent, stirring from time to time. Add the remaining 2 tablespoons of oil to the orzo and stir-fry for 5 to 7 minutes, or until the orzo is toasted and deeply brown.

Step 03: 

Include the rice and toss to coat. Stir in the broth, bay leaves, lemon zest, and 2 tsp salt. When it comes to a boil, cover. Turn down the heat to medium-low, bring to a simmer, and cook for 15 to 20 minutes, covered and stirring now and again, or until liquid is absorbed.

Step 04: 

Turn off the pot. Pour lemon vinaigrette over rice mixture after uncovering pot. Cover right away, then wait ten minutes.
 

Step 05: 

Use a fork to fluff the rice and discard the bay leaves. Add parsley and dill and stir. To taste, add additional lemon juice, salt, and pepper. Add the almonds and feta on top.
