Nests of Zucchini Noodle Eggs

These easy zucchini noodle "nests" are stuffed with Parmesan, hot tomato sauce, and an egg, and baked until they are just set—a recipe inspired by purgatory eggs. The individual nests are ideal for breakfast, brunch, lunch, or dinner and are simple to serve.

 Ingredients:

  •  3 tablespoons olive oil
  •  1 small yellow onion, finely chopped
  •  One 28-ounce can crushed tomatoes
  •  3 sprigs fresh basil, plus more for serving
  •  1/2 teaspoon crushed red pepper flakes
  •  Kosher salt
  •  Nonstick cooking spray, for the muffin pan
  •  8 ounces zucchini noodles
  •  1/2 cup grated Parmesan (about 2 ounces)
  •  6 large eggs


Directions:

Step No.1


A big skillet should be heated at medium-high heat. Add the oil and onion, and heat, turning often, for approximately 4 minutes, or until the onion begins to turn translucent and brown around the edges. Add the basil and tomatoes and stir. Add a teaspoon of salt and crushed red pepper flakes for seasoning. After bringing to a simmer, lower the heat to low and continue cooking for about 20 minutes, or until the flavors are blended and the tomatoes have somewhat decreased.

Step No.2

As you wait, heat the oven to 400 degrees Fahrenheit.

Step No.3


Apply nonstick cooking spray to a 6-cup muffin pan. Make sure there is a hole in the middle for the egg when you arrange the zucchini noodles into tiny nests inside each cup. Add one tablespoon of finely grated Parmesan cheese to each nest.Transfer two or three teaspoons of sauce into every nest. Using your spoon, create an indentation for the egg in the center of the sauce. In each nest, crack an egg. Add the remaining Parmesan and 1/2 teaspoon salt to the eggs.

Step No.4

Bake for 15 to 20 minutes, or until the eggs are mostly set but still somewhat jiggly. Using an offset spatula or butter knife, carefully remove the nests; they should slide out of their cups. Garnish with a handful of freshly shredded basil and serve hot, with the leftover sauce.
