How to make Mini Frittatas

 

Ingredients:

  •  Nonstick vegetable oil cooking spray
  •  8 large eggs
  •  1/2 cup whole milk
  •  1/2 teaspoon freshly ground black pepper
  •  1/4 teaspoon salt
  •  4 ounces thinly sliced ham, chopped
  •  1/3 cup freshly grated Parmesan
  •  2 tablespoons chopped fresh Italian parsley leaves


Directions:

Step No.1

Start the oven at 375 degrees Fahrenheit.

Step No.2

 
Apply nonstick cooking spray to two 24-cup mini muffin pans. In a big bowl, whisk together the eggs, milk, salt, and pepper. Add the parsley, cheese, and ham and stir. 

The egg mixture should be poured into the prepared muffin cups almost to the top. Bake for 8 to 10 minutes, or until the egg mixture puffs up and is just set in the center. Remove the frittatas from the muffin cups by using a rubber spatula, then transfer them to a dish. Serve right away.
